To poach chicken: bring a large pot of water (with salt, bay leaves and lemon rinds) to a boil. Add chicken and turn down heat to simmer. Cover, cook for about 8 mins. Let cool and shred.
Poached and shredded chicken (any other cooking method would be fine too), sliced grapes, diced celery, diced purple onion, lemon, and chopped fresh dill.
Combine together in bowl, get ready to mix sauce ingredients...
Whisk the mayo, Greek yogurt, Dijon mustard, brown sugar, cayenne, salt and pepper (as needed) until blended.
Stir everything together until coated. Let it hang out in the fridge for a little bit.
It's ready! There are plenty of yummy ways to enjoy it: plain, with crackers, stuffed in a tomato, lettuce leaf, over a salad... I chose the sandwich route!
