How to make delicious buttermilk waffles from scratch

Add buttermilk to bowl.
If you don't have buttermilk (like me), add 2 tablespoons of lemon juice (or white vinegar) to enough milk to make 2 cups. Stir and let sit a few minutes.
Melt the butter (25 seconds in the microwave).
Beat 3 eggs
Stir together the buttermilk, butter, eggs and vanilla.
Measure dry ingredients. (Run a butter knife over the measuring cup to accurately measure.) Use a whisk to combine.
Add buttermilk mixture to dry ingredients. Stir to combine. Let sit 5 minutes.
Preheat waffle iron. Spray with cooking spray.
Add waffle batter with a ladle. Don't overfill. (I've had it overflow onto the counter 😊)
Top with butter and maple syrup, strawberries and whipped cream, or whatever you like.
I freeze extra waffles and warm them in the microwave or toaster for a quick breakfast another day.
- 2.0c Buttermilk

- 4.0Tbsp Butter, melted
- 2.0c Flour
- 1/2tsp Baking soda
