Gather your ingredients. Super simple: there are only four things you need!
Optional ingredients if you want to make your cookies pretty.
Grind the sugar and DAVIDsTEA Sweet Dreams herbal infusion together. I used a food processor, but a blender or mortar and pestle will work too.
Place the sugar mixture into a bowl and add the butter.
Mix until smooth.
Add the flour and continue mixing.
Don’t be afraid to get your hands in there!
When the dough is free of visible lumps of butter, form it into a disk-shape.
Wrap the dough in plastic wrap and place in the refrigerator for 30 minutes.
Take the dough out of the refrigerator and preheat the oven to 300°C.
Roll the dough out until it’s about ¼-inch thick.
Use a cookie cutter to cut out your cookies. These are about an inch and a half in diameter (which makes about 48 cookies). Place them on an ungreased cookie sheet.
Bake on the middle rack for 25-30 minutes. They’re done when the sides of the cookies begin to turn golden.
(Optional glaze) While your cookies are cooling, mix a small amount of water with the icing sugar until you have a spreadable glaze. I added one drop of red food colouring to make my glaze pink.
Pick out some rose petals from the DAVIDsTEA Sweet Dreams herbal infusion and set aside.
Place cookies on parchment paper and drizzle glaze over them with a fork. Decorate with rose petals.
