First, sprinkle the gelatin over 1/4 cup of coconut milk and let it set for 15 min

Bring the rest of the milk to a simmer and add the gelatin/milk mixture. Whisk until dissolved.

Put it into a bowl and let it set in the fridge for 5 hours.

With a electronic mixer (once the milk has set), blend for 20 or 30 seconds in middle speed, the texture should resemble cottage cheese.

Finally add a pinch of salt and enjoy with any toppings you might like!

Hope this works for you, I've done it once and it was a very good thing! Another option is making a reverse spherification on the coconut milk but that's kind of very cheff stuff!!
