In a small sauce pan, add oil on medium-high heat. Add onions and saute until translucent, 4-5 minutes.
Add curry spices (like madras curry powder, vadouvan or garam masala spices) with rice and saute until fragrant, 2-3 minutes.
Add broth and salt to taste. Bring to a boil over high heat, as soon as it boils turn heat all the way down and cover, 18-20 min, until done, with lid on.
Remove from heat and let sit, 5-10 minutes. Serve with fresh or dried fruit like mango, toasted nuts, cilantro or yogurt and enjoy!
