This is a recipe I use a lot for cupcakes when I'm in a hurry without compromising flavor. This works better if you add something to the mix (ex. Banana puree, blueberries, chocolate chips, oat, etc).

I made this ones coffee flavored, but you can change to anything you wish. With this said, let's get started. Gather your supplies and preheat the oven at 200 C.

Tip: I am using my generic kitchen oven, this ones usually work 10- 15 degrees lower than said thats why I use a bit lower than 200 for getting 180 C

Tip 2: I've found that humid heat in the oven really benefits the quality of the cupcake, so I like to put a heatproof bowl with some water inside the oven. And avoid opening too much the door.

Tip 3: when making pastries and bakery goods, eggs are very important, as you will find more percentage of egg white in the white ones. (In average brown ones have a normal ratio yolk/white)

Add all humid ingredients at once over the dry ones. Stir until combined, do not over mix as gluten (protein from wheat, it comes in the flour),will develop and you will end up with stones once baked.

Line the tray with baking paper, and add the mix, as you can see its not stiff and runs easily. You can tell this because it wont hold a shape for long time, it will stick to the tray's shape.

Bake for 18 minutes and check if done inserting a toothpick it should come out dry. Do not open the oven door until at least 15 mins had passed.

When baked, let them cool for 5 min over the tray then 30 mins over a cooling rack.

Decorate as desired. Ad of course! ENJOY THEM!!!
