THOROUGHLY drain and rinse garbanzo beans and transfer to a paper towel-lined bowl and pat dry.  The drier you can get the beans the better!

Once beans are dry, add all of the ingredients and stir until the beans are well coated.

Spread beans onto tin foil lined baking sheet and bake in a preheated 400*F oven for 30-40 minutes or until beans become hard, stirring occasionally. (Mine took the full 40 minutes on a medium rack).

Beans will darken slightly when done. When you remove them from the oven, if you'd like more salt, now is the time to add some while the beans are hot.  Let cool completely before eating!

  • 1 15oz can of garbanzo beans
  • 1 TBSP extra virgin olive oil
  • 1/4 tsp kosher salt
  • 1/8 tsp ground pepper
  • 1/8 tsp good paprika
  • 1/8 tsp ground garlic powder (or more to taste)
