You can make this without the pectin, but I wanted to be sure it jelled, so I added it in.
Wash & hull strawberries.
Slice in half and put in crockpot.
Mix in sugar, lemon juice and pectin.
Turn crockpot to high and slow cook for three hours.
This photo was taken after one hour. Cook for two more hours then use a potato masher to mash up the strawberries.
Fill containers with jelly. Allow to cool before storing in the refrigerator (or freezer). Do not put in cupboard! Share your bounty with others & they will be amazed at your greatness!
- Four pounds strawberries
- 1 cup sugar
- 1/4 cup lemon juice
- 3 TBSP pectin
- Glass or plastic containers w/ lids to hold jelly
