I love this for a quick dinner. I've used leftover roasted chicken which makes it even quicker
Add a chopped onion to a tin of tomatoes
Add 1 tsp oregano, ground black pepper, a crushed clove of garlic and 1 tbsp of balsamic vinegar
Add some stock (this is fresh but a stock cube would be fine)
Once the onion is soft add leftover roast chicken
Once the chicken is heated through. Add a sprig of chopped basil
Add 2 tbsps of cream cheese and stir well
Serve with a green salsd
