How to make creamy mustard chicken stew
Try this tasty creamy sauce without the unnecessary fat and calories. Enjoy!

INGREDIENTS
Serves two. You can swap the veg for those you like best. Start by placing one chopped onion and two chopped leeks in a pan
Add about 50g of cream cheese (I used Philadelphia)
Add seasoning and 1/2 chicken stock cube (a veg stock cube would does well) or even better fresh stock if you've recently roasted a chicken
Add two diced chicken breasts, a heaped teaspoon of whole grain mustard and a wine glass worth of water. Place on the heat and stir well
I added some frozen cauliflower and frozen broad beans that I had in. Stir well and cook over a medium heat until the chicken is cooked through and the vegetables are soft
Serve with green vegetables and/or salad
