Okay I'm going to bake my bacon this way it won't splatter everywhere and make a big mess. So preheat your oven to 400.
Line a baking sheet with tinfoil and just place the bacon down. It should take about 10 minutes to cook.
The bacon will come out crisp and yummy!! :) and guess what!!?! No mess to clean up!!
Now, you'll need to cut the bacon up. Place it in a bowl but take a small handful and save it for a nice little garish later.

Okay let's get our leeks ready you will need to clean these pretty good. I use all of the white and a little green.
Chop them up pretty fine, then place in a bowl of cold water then allow to set for 10 minutes to help get any dirt that may be stuck on the leek.
Now heat the butter in a large skillet over medium-high heat. Add the leeks and sauté for 2-3 minutes, until the leeks are softened.
Once done allow leeks to set now begin to peel and wash your potatoes. I used 6 potatoes because I had one smaller one.
Cut up your potatoes.
Place on the burner until soft. (Just like how you would make mashed potatoes) Drain them and place them back in the pot.
Add leeks and broth to the drained potatoes. Place on medium-high heat and wait until it boils.
While your waiting grate your cheese leave a small portion for a garish.
Okay once it begins to boil take off heat and allow to cool a little. Once cooled use an immersion blender to purée the soup.
Chop up your green onions these need to be FINE! Use the whites of the onion and a little of the tender green parts.
Add the bacon, cheese, green onions, salt and pepper and milk. Bring to a soft boil and then your ready to serve!
Add a a bit of sour cream, cheese and bacon! And there you have it!! A super yummy loaded baked potato soup!! Doesn't it look amazing!!!!?

- 4.0Tbsp Unsalted butter
- 2.0 Medium leeks
- 5.0 Large russet potatoes
- 4.0c Chicken broth
- 1.0c Whole milk
- 2.0c Finely chopped sharp cheddar cheese
- 6.0 Green onions
