Gather your ingredients!
In a microwave safe bowl, place the spinach and cover with cling wrap.
Cook spinach in microwave for 5 minutes on High.
In the meantime, chop 1/2 an onion.
Cut 2 Tbsp of butter.
Measure out 1/3 cup sour cream. I'm using "light". You could also use Plain Greek Yogurt.
Have your cider vinegar ready to go.
In a large non stick skillet over med / high heat melt the 2 Tbsp butter.
Now add you chopped onion. And sauté until translucent.
Add in a dash of sea salt for taste and to sweat those onions some.
The spinach is done cooking in microwave, drain off excess water in a fine colander.
Add the drained / cooked spinach to the skillet with the onions.
Now add that 1 tsp of cider vinegar.
Add in the 1/3 cup sour cream.
Mix all ingredients until well blended and simmer down.
Done! Serve warm and enjoy. Serves : 3 ; 3 g fiber and 4 g protein
- 10.0oz Package frozen chopped spinach
- 1/2 Onion, chopped
- 2.0Tbsp Butter
- 1/3c Sour cream
- 1.0tsp Cider Vinegar
