I baked a carrot cake, it was not a piece of cake to get it out of the baking tin. I can't serve it like this so I will attempt to save it by covering it with fondant.
I have never worked with fondant let alone tried to make it. So after looking at different recipes I decided to make it with marshmallows. I added the lemon juice and cream cheese to go with the cake
I added the cream cheese and lemon juice to the marshmallows and gave them 20 sec. In the microwave a couple of times until it started to puff up. Then stirred it together.
I added the powder sugar little by little until I had a " dough " that I could roll out with my rolling pin. Dust with the powder sugar.
Make sure it does not stick, by moving it around. I think it would have been easier to spray with oil instead, I don't know as I said this is my first attempt on fondant.

I had made the cream cheese topping so I added it on half of the cake.
The rest of my baking disaster on top.
I rolled out another piece of fondant and covered up my deed. Not pretty but a bit better than the starting point. Forget how this looks, it is about the fondant.
I'll have to blindfold my guests. The fondant tastes nice and is very easy to work with. I'm not a fondant expert as you can plainly see but I'm going to try making it again on a more successful cake
- 8.0oz Marshmallows
- 1.0oz Cream cheese
- 1.0Tbsp Lemon juice
- 3.0c Powdered sugar
