Wash and slice sweet potatoes in rounds and put down a layer in a casserole. Grind on Salt, Pepper, and sprinkle on ground cinnamon. Add more layers and salt and pepper and cinnamon for each layer.
Add about a cup of water.
Add washed fresh or frozen unsweetened cranberries. I didn't measure just put in enough that it looks really pretty! Any left overs you can put in a ziplock and put in the freezer for another time.
Cover and put in the oven at 450 for about an hour or more.
After about an hour check to see if the potatoes are soft. When they are very fork soft drizzle on about a half a cup of melted butter or coconut butter would probably be awesome and make it Paleo!
Take off the cover and put it back into the oven for about half and hour.
The last time I did this there was extra liquid left in the bottom so I used a fork to break up the potatoes so they would absorb the liquid.
Alternatively, you could use orange sweet potatoes or, for a paleo version, coconut butter to replace the butter.
We had cranberry sweet potatoes with steamed kale and chicken sausages. It was delicious.
- 2.0 Large Sweet Potatoes
- Ground Cinnamon
- 1.0c Water
- 1/2c Melted Butter
- 1.0 Casserole Dish
- Aluminum Foil/Cover
