This is a great recipe for leftover chicken, just chop or shred!
Place chicken in a small bowl.
Add celery and onion. If you want a sweeter chicken salad, substitute water chestnuts for the onions.
Add a heaping spoonful of mayo and slaw dressing. Be conservative, you're making chicken salad, not mush. You can always add more mayo later if needed.
Stir mixture. Add pecans and cranberries. Stir again.
Add salt, pepper, and a few shakes of basil. Stir one last time.
Serve on crackers and enjoy! (Would also taste great on bread or a roll as a sandwich!)
