Gather your ingredients

Grate the zucchini for the fritters

That's what the zucchini should look like

Pour out your 1/3 of a cup of milk

Pour 1/3 cup of milk into grated zucchini

Add the two eggs into the milk and zucchini

Add your 310 grams of corn kernels

Whisk everything up and add your salt and cracked pepper

Sift the self raising flower and the cumin

Add the self raising flower and cumin to the mix and stir up

This is what it will look like (doesn't look very good now but it will later!)

Heat a little oil in a non-stick frying pan over medium heat

Placed heaped tablespoons of the mixture and cook in batches ( around 3)

Flip them over and they should look like this

After cooked drain on cooking paper

Put foil over and put in the oven to keep them warm

Dice your tomato and avocado to serve

Your diced vegetables should look like this and u can have corriander leaves for serving (optional)

Also you can have tzatziki and sweet chilli sauce

The final dish. Enjoy!

- 310.0g Corn kernels (drained)
- 150.0g Zucchini (grated)
- 2.0 Eggs (slightly beated)
- 1/3c Milk
- 1.0c Self-rising flour
- 1/2tsp Grounded cumin
- Salt and cracked black pepper
- Chopped tomato, to serve
- Chopped avocado, to serve
- Coriander leaves, to serve
