Start with the pretzels, add together the water, two tablespoons of light brown sugar, yeast, and the butter, then mix with the dough hooks until the combined, then let the mixture sit five minutes.
Next add the 4 1/2 cups of flour and the 1 1/2 teaspoons of sea salt and mix until the dough lifts from the sides of the bowl.
After mixing remove the dough and knead into a ball with your hands on a flat surface.(I used a cutting board, but any flat surface is fine.)
Once the dough is in a ball, coat a bowl in canola oil and place the dough inside. Roll it around in the bowl to coat the sides.
Once the ball is coated, cover the bowl in a cloth or paper towel and place it in a warm place for at least an hour to double in size.
Around ten minutes before the hour is over, start on the cookie dough by combining the 2 1/2 cups of flour, teaspoon of baking soda, and half teaspoon of salt. Mix these thoroughly.
Next, in the second large mixing bowl mix the granulated sugar, packed brown sugar, vanilla, and salted sugar. Once they are well mixed, add the two eggs and mix again for 3-5 minutes.
Using the normal mixer beaters, mix the mixture in the larger bowl and gradually add the flour mix and continue mixing until creamy.
Once the mixture is creamy, add the chocolate chips and mix WITH A LARGE SPOON. Mixing the dough with the electric mixer may break it. I am not being held responsible for that. Be smart, please.
Check to be sure your dough has risen before going to the next step.
Preheat your oven to 425ºF or 218ºC, it needs to be ready by the time you finish the next few steps. Trust me, if you don't this will take a lot more time than it needs to.
After the oven is preheated, divide the risen dough into seven to eight equal dough balls and place them on a flour covered flat surface.
Once the balls are on the surface, roll them out into strips three inches wide and around eleven inches long, these are not exact measurements, only relative.
When the knots are done, dip them in a mixture of warm water(unspecified amount) and two teaspoons of baking soda. Then brush them in a beaten egg and sprinkle in seasoning(Course salt/Choice season).
Place the pretzels on parchment paper on a tray, no more than 4 per tray. Place them in the preheated oven for 18 minutes or until dark brown. Clean while you wait, this stuff makes a mess.
A picture of the prettiest finished product. Not all of them will turn out looking nice, which is fine, taste is the important part.
