This recipe has been adapted from http://www.chow.com/recipes/29184-ginger-chicken-jook-rice-porridge Makes 3 servings instead of 6 in the original recipe.
Slice ginger into 4 small pieces.
Measure out 1/4 cup of sushi rice and 1/4 cup of mochi rice.
Add rice to rice cooker.
Add 3 cups water and 2 cups chicken broth to the rice in the rice cooker.
Add 1 tsp kosher salt.
Set the rice cooker to porridge mode and start cooking. It will take about an hour.
While rice is cooking, wash one scallion.
Thinly slice the scallions.
Steam the lup cheong for 6 minutes.
Slice the lup cheong.
Add scallions and lup cheong to the finished congee. Bon appetit!
