Gather your ingredients.

Measure pancake mix and water. Yes, I use mix instead of batter from scratch. Cooking is supposed to be fun! You're allowed to take a few shortcuts! :-)

Use a whisk to blend mix and water until smooth.

Add a splash or two of vanilla extract.

I pour the mix back into my measuring cup to make it easier to pour the batter on the griddle.

Preheat your griddle to medium heat (or a little below medium) and add a Tbsp of oil.

Pour batter directly on the oil. This will make your edges crispy like in the restaurants .

When edges start to bubble, add sprinkles and flip.

When you flip, your bottom side of the pancake should look like this. Cook a minute or two, then flip your pancake onto a plate.

You could add whipped cream to make it more dessert than breakfast or eat like it is. Serve and enjoy!
- 1.0c Pancake mix
- 2/3c Water
- 1.0tsp Oil
- Vanilla extract
- Candy sprinkles
