All the ingredients needed for the pancakes
Sift the flour and sugar into a bowl and make a well in the centre.
Add the eggs and coconut milk to the well and stir into the flour then whisk to a smooth bubbly batter
Cut off the skin of he pineapple and remove the core and cut the flesh into chunks
Heat a small amount of oil in a heavy based frying pan and pour in a little batter, swirling to cover the pan.
Cook the pancake on a high heat until set and golden underneath
Toss or turn the pancake and cook until golden on the other side
Repeat with the remaining batter to make 8-10 pancakes, stacking alternately with non stick paper between whilst making the rest
Fill the pancakes with pieces of pineapple and fold into fan shapes to serve
Sprinkle the pancakes with toasted shreds of coconuts and serve drizzled with coconut cream :)
- 140g plain flour
- 2 tbsp caster sugar
- 2 eggs
- 400ml coconut milk
- 1 medium pineapple
- Groundnut oil
- Canned coconut cream to serve
