Preheat the oven to 425 degrees.
Slice the ends off of the sweet potato.
Peel the skin from the sweet potato.
Should look like this when it is completely peeled.
If you only have coconut oil in the solid form (like me) then you want to melt it into its liquid form. So gather 1 tbsp. of solid coconut oil...
Place it on a tray/pan and stick it in the oven for a few minutes until it completely melts.
And when it's completely melted, you can remove the tray from the oven and it should look like this.
Slice the sweet potato into wedges. (Sweet potatoes are harder than regular potatoes, so this definitely requires a sharp, large knife)
Place the wedges in the coconut oil covered dish. Toss the wedges around in the coconut oil, completely covering them with the oil.
Sprinkle the sweet potato wedges with cinnamon.
Place the dish in the oven and set the timer to 35 minutes.
At 15-20 minutes through baking, remove the dish from the oven and turn the sweet potato wedges over. Then place them back in the oven for the remainder of the time.
When the timer goes off, remove the dish from the oven, let the wedges cool for a few minutes, and enjoy :)
