First start with 3 tsp yeast
Add 1/4 c warm water and let that sit and get active and frothy
While your yeast is sitting aside, in a mixing bowl add a stick of softened butter, 2 eggs, 2 tsp vanilla and 1/2 c sugar. I have everything at room temp; just mix to blend
Then add the yeast mixture to this. As you can see its proofed some and is thicker and frothy. Mix that for a minute then add 1 c whole milk that has been warmed for about a min in microwave.
Now add your dry ingredient: 3 c bread flour.
Start mixing this in slowly.
Add another cup (4 cups bread flour total) and mix gently in. You may need more flour; I didn't this particular morning. You will knead the bread and use more flour then; keep that in mind
Once dough has formed and still a little sticky, turn out on counter top and start kneading
Flour your surface lightly and knead for ten minutes. You can use the dough hook attachment for the mixer, but I prefer to do it by hand
Once your finished kneading, place in a large, lightly oiled bowl to rise. Cover with plastic wrap and place somewhere warm (I use my laundry room) and let proof for about an hour.
Once your dough has doubled in size, turn out again on floured surface
Roll your dough to about 1/2 inch thickness into a rectangle shape
Use 4 TB softened butter and spread all over the dough
Then brown sugar. I don't measure I just use as much as I need to cover entire surface
Sprinkle on the cinnamon. BE CAREFUL here. I think the sure fire way to ruin cinnarolls is too much cinnamon.
Now roll up as tightly as possible, the dough. Rectangle shaped; you'll want to roll long side to long side.
I cut mine about a half finger size thickness
Place cut rolls on a lined baking sheet. You don't want them touching..they bake up and will need that room to properly bake fully.
Bake at 350, for about 20 minutes. Bottom rack.
See, those rolls fill in the open spots :)
NOTE: if you make this dough the night before, you can let your cinnarolls sit over nite COVERED WELL, in the fridge. Then next morning let them come to room temp (about 30 min) and bake like directed
Now for the frostings :) my kids and I prefer caramel frosting but my sister prefers cream cheese. So I made both Cream ch frosting: in mixer, add 4 oz soft cream cheese and 4 TB soft butter
Add 1 cup powdered sugar and beat well.
Add a spoonful of marshmallow cream (mine is homemade) and beat this for another min or so. Ready set frost!
For the caramel glaze frosting: in a small cooker add 4 TB butter, 1/4 c brown sugar and 1/4 c DARK brown sugar. Let this come to a gentle boil over low heat
Once boiling add 2 TB milk. It will boil up like pictures when you add he milk be careful
Add 1c powdered sugar and beat with a hand mixer to get to your desired consistency. If it thickens up on you too quickly, add a few drop more of milk
Glaze those babies
Whichever way you prefer to top them, these are one of our favorite traditions on Christmas morning
