The important thing to remember with fudge is to plan ahead. Have all ingredients pre-measured because when the fudge is ready to prepare, it is a fast process.
Place a candy thermometer along the side of a heavy-bottomed kettle.
Ensure that the thermometer is not touching the bottom of the kettle.
Add 6 tablespoons of butter.
To the butter add 3 cups sugar and 1 cup evaporated milk.
Slowly melt the contents, stirring occasionally.
Bring to a boil, stirring constantly.
Once boiling, watch the thermometer. Being liquid to soft boil stage or 240 degrees. Avoid simply turning the stove on high. Make sure to do this process slowly while stirring constantly!
When liquid is at a soft boil, remove from heat. Add 12 ounces semi-sweet chocolate.
Add a pint of marshmallow creme.
Stir vigorously until dissolved.
Pour immediately into a buttered 9x9 pan. The liquid will set quickly!
If desired, add 1/2 cup chopped nuts while fudge is still hot. Let cool and enjoy!
