Line an 8x8 pan with foil and spray with cooking spray. In a medium bowl, melt peanut butter and butter together in microwave (about 1 minute).
Crush pretzels in food processor (or with your hands. Whatever).
Stir peanut butter mixture with pretzel pieces, confectioner's sugar, and salt. Spread evenly into prepared pan and refrigerate for at least 10 minutes.
While waiting, in a small saucepan or microwave-safe container, heat heavy cream to near boiling. Pour over chocolate chips.
Let sit for 2 minutes. Stir until chocolate is melted and smooth.
Pour chocolate ganache over chilled peanut butter base and spread evenly.
Sprinkle with coconut if desired.
Refrigerate for at least 1 hour before cutting. Enjoy!
