Preheat your oven to 180 degrees Celcius.
Spray your baking tray with oil and place a sheet of baking paper on top.
In a bowl, place the coconut, plain flour, self raising flour, chocolate chips and brown sugar together.
Use the back of your spoon to remove any lumps from your brown sugar.
Crack your egg in a bowl, and whisk it.
Pour the egg into the mixture.
Mix the mixture a bit.
Now melt your butter for 25 seconds, so the butters warm and easy to mix in.
Pour the butter into the bowl.
Mix it all together.
WARNING: Make sure you do not put in the egg and butter at the same time, or else the warm butter will start to cook the egg.
The result should look like this. TIP: If your mixture is a bit too wet and sticky add a bit more flour.
Use a table spoon, and spoon a bit of the mixture onto your hand. Flatten the cookies out so they are 1cm thick, and 3cm wide.
Once you have made all your cookies, place them in the oven for about 10 minutes. SAFETY TIP: Make sure you use oven mitts when taking them in and out of the oven.
Once the cookies are golden brown take them out.
SAFETY TIP: Make sure the cookies aren't undercooked. Eating undercook food can be very bad for you.
Evaluation: The cookies turn out fantastic. They had a golden brown colour and weren't over or under cooked. The cookies tasted REALLY good and I would recommend this easy and simple recipe to anyone.
Now enjoy the cookies with some milk or simply by themselves! You can even use this recipe to make white chocolate cookies. Just substitute the milk chocolate for the white chocolate.
- 1/2c Dry coconut
- 1/2c Plain flour
