INGREDIENTS
Start by melting your dark chocolate in a bowl over boiling water
Add five eggs to your mixing bowl
Pour out 3/4 cup off caster sugar
Add sugar to eggs a whisk for five minutes on high speed till mixture is a third the density
Like so... Yellow and creamy
Pour a full cup off rice flour into bowl and fold into egg mixture. Can use normal flour too.
Add baking powder to help it rise
Check on your melted chocolate and turn down heat when fully melted
Mixture should still be light and fluffy even after adding the flour
Now slowly fold in the melted chocolate
Yummy - lastly fold in the glazed cherries
Separate mixture into two cake tins the same size
Like so... Don't worry the mixture will even out as it cooks. Now add to oven at 160 Celsius for about 20 minutes
Whilst the cakes are baking prepare your butter icing. Used desired amount off butter
You should then add double the amount off icing sugar and a table spoon off water
Mix on low speed
Add colouring
Mix until it's all pink or whatever colour you like :)
Add half to piping bag and leave till ready
Rest cakes to fully cool before adding butter cream
Once cooled lay out first layer
Smother in half the butter cream left in bowl
Add second cake on top off the other like so - looks like a giant Oreo
Pipe the rest off the butter cream in a similar messy design as the picture and add hundreds and thousands
