How to make chinese egg & tomato
Another recipe from Auntie Judy's kitchen. Egg and tomato is a very common Chinese dish, and for good reason! It's delicious and so easy to make.

INGREDIENTS
Here are the ingredients- 5 eggs cracked and beaten, 2 tomatoes sliced up, and some green onions.
Set the stove to high.
Add some cooking oil to your pan.
Once the pan is very hot (this is important), add the eggs
Let it cook a little
Then scramble away only slightly. You don't want to break it up too much- the egg pieces should still be pretty big.
Once it's done, put the eggs aside in a bowl.
Ta da! As you can tell, we didn't break the egg that much. And that's how it should be.
Add some more oil to your pan.
Add the green onions once the oil is hot, and stir until fragrant.
Add the tomatoes.
Then add the eggs that were prepared earlier.
Now that all the ingredients are mixed a little
We cover the pan
Set the heat to low, and wait approximately 15-20 minutes.
We know the dish is finished when we can see all the tomato juices at the bottom of the pan.
Add some ketchup for some color and flavor
Give it a good mix or two
Plate it, and serve. This dish can be served family style, or made for a lunch box. Enjoy!
