How to make chilaquiles.

Once oil is hot. Add tortillas.

As the tortillas start browning. Add salt n pepper to taste.

When most of them are getting crispy edges, open up the center and add the butter.

Try to get as much egg on all tortilla squares. You need to keep stirring it. Mixing it. Folding it. You know what I mean.
