Add olive oil to skillet. Make sure the oil gets hot.
The object here is to cut the tortillas into bite sized pieces. I like to stack em. Cut em like the 2nd pic
Once oil is hot. Add tortillas.
Get your eggs ready. Scramble em up!
As the tortillas start browning. Add salt n pepper to taste.
When most of them are getting crispy edges, open up the center and add the butter.
Add the eggs. Salt n pepper to egg.
Try to get as much egg on all tortilla squares. You need to keep stirring it. Mixing it. Folding it. You know what I mean.

- 6.0 Corn Tortillas
- Salt & Pepper
- 2.0Tbsp Olive oil
- 1.0Tbsp Butter
