The basic ingredients plus 2 tbls taco seasoning and 1 tbs olive oil.
Drain the can of chickpeas and toss together 2 tbls taco seasoning, 1/2 bag chopped cauliflower or more, the chickpeas and 1 tbls olive oil.
Spread mixture on greased pan and roast at 400 degrees for 35 minutes until browned.
While baking, stir together 1/2 cup plain yogurt, 1 tbls lime juice and some chopped cilantro. Add salt and pepper to taste. Fage yogurt brand is just like sour cream without the fat.
Top tortilla with the roasted mixture and jalapeños. (The original recipe has more ingredients, including red and green peppers, and more steps.)
Add more cilantro, lettuce and lime cream.
Since the inside is crunchy, I recommend the soft taco shell to compliment.
