Add olive oil to a large saucepan over medium heat.
Once the olive oil heats, add the garlic, carrots, celery, & red onion. Stir & cook for about 5 minutes until they begin to soften.
Add in the chicken broth.
Season with parsley, italian seasoning, sea salt, black pepper, & thyme. Bring to a boil then lower the heat & cook for 6 minutes.
Add the chicken & cook for another 3 minutes to heat up.
Last add in the zoodles and stir to combine everything.
Cook for another 3-5 minutes depending on how soft you want the zoodles to be.
- 3.0 Zucchini, spiralized
- 2.0 Cooked shredded chicken breast
- 2.0Tbsp Olive oil

- 1.0c Baby carrots, chopped

- 4.0 14.5 oz can, Fat free chicken broth
- Fresh Thyme
- Italian seasoning
