Let's begin by preparing chicken. Bring 1 olive oil and sauté the onions until soften ..
Add the chicken breast, cut into pieces. I boil the breast first then chopped it. Then add the spices. I used: paprika, curry powder n garlic salt or shawarma spices. + salt and pepper for taste.
Then add the spinach
Then the tomatoes and bell peppers.
And I also added some cooked rice. This step is optional.
Heat a large pan over a medium heat until hot, grease it with a bit of olive oil.
Place a tortilla in the pan let it cooked for 30 second ..
Flip it ..
Sprinkle with shredded cheese. I used mozzarella ..
And some chicken mixture and shredded cheese on top of the chicken.
Fold the tortilla in half, and cook until the bottom of tortilla is golden brown in several spots. The cheese also should be melted.
Do the same thing to the other side.
You can use the flat toaster ..
It's much easier using flat toaster.
But is not as crispy as the one made on a pan. Repeat with the remaining ingredients.
Cut into wedges or any shape you want, and serve with salsa, sour cream or guacamole, if desired.
