For the peanut sauce you will need garlic, ginger, peanut butter, oil, brown sugar, and soy sauce.
First, finely mince your garlic and ginger. Put into a bowl and add your soy sauce.
Next, add the brown sugar. The salty and sweet notes from the soy sauce and brown sugar work very well together in this sauce.
Here's a helpful tip! Before measuring something sticky, such as peanut butter, spray your measuring cup with a bit of nonstick spray. No mess!
Add your peanut butter to the bowl.
Add the oil.
Whisk to combine.
Perfect! Peanut sauce is done. Now onto the wraps...
For the wraps you will need chicken breasts, a cucumber, a head of lettuce, and broccoli slaw.
Thinly slice the chicken breasts and sauté over medium-high heat until cooked through.
Prep your cucumber by peeling, scooping out the seeds with a spoon, and slicing lengthwise into strips (tap the picture to enlarge).
To assemble the wraps, place a lettuce leaf on a plate and add the chicken and vegetables. Drizzle with peanut sauce. If desired, garnish with cilantro and chopped peanuts. Enjoy!
