If using steak cut it to the size you want, if you're using cubed steak skip to step 4.
Get a meat tenderizer and pound it gently on the steak with the pokey side not the flat smooth side.
Afterwards it should look similar to this
Heat your oil or lard in a large skillet on medium to medium high heat
Combine flour, salt, pepper, garlic, onion and paprika and mix it together(you'll want this on a plate or pie dish etc.)
Next combine egg and milk and beat them together(also flat surface better in something like a pie pan)
Coat both sides in the flour mixture
Coat both sides in egg mixture and let the excess egg drip off if any does drip
Coat the steak in the flour mixture one last time.
Set steaks in the hot oil and cook on each side 3-6 minutes. It should be nice and golden brown.
Set them on a paper towel so the excess oil comes off easier
Remaining oil/lard leave it on the heat at about medium. If you think you need more to make 2 TBS of oil go ahead and add more in and let that heat up.
Start to mix in 2 TBS of flour and let it cook while you stirring for about a minute.
Slowly start to whisk in 2 cups of milk start slow so when the milk starts to combine with the flour mixture it doesn't form clumps
If its to thick add a little more milk and if it's to thin let it cook and reduce some as it will thicken. Also add salt and pepper to taste
Viola chicken fried steak
- 1 lb cube steak or top round thin steak
- 1/4-1/2 cup flour
- 2 tsp paprika
- 1 tsp salt
- 1-2 tsp pepper

- 1 tsp granulated garlic(garlic powder)

- 1/4 cup milk
