Mix flour and curry powder
Chop veggies (onion, bell pepper, apple) I used a garlic press for the garlic. {I hadn't minced the jalepeño yet because I omitted it. Too hot for my little boys. My husband topped his meal with it.}
Heat olive oil and butter over medium high heat.
Add chicken and lightly brown.
Remove the chicken from the pan
Turn the heat down to medium. Add a little more butter and cook the onions and garlic until light brown.
Mix in apples, bell peppers, (and jalapeño). Cook for a few minutes.
Add flour and curry mixture. Stir around for two minutes.
Pour in broth and raisins. Stir. Reduce heat to low and simmer for 20 minutes to blend flavors (about the time it takes to cook the basmati rice).
Top with sour cream, mango chutney or whatever you like on your curry.
- 2.0 Boneless, skinless chicken breasts
- 1.0 Onion, chopped

- 2.0Tbsp Curry powder
- 1/2tsp Salt
- 2.0c Chicken broth
- 1/2c Raisins
- Olive oil
- Butter
- Basmati rice
