Sift together the flour and the salt. Add the yeast
Add the milk and two tablespoons of the butter and combine
Knead until smooth. Cover and let sit for 1 hour, or until the dough has doubled in size
Knead lightly then roll out to a 10 x 12 inch/25 x 30 cm rectangle
Choose a mix a dry fruit and nuts (I use dried cherry and cranberries and walnuts)
Chop the fruits and the nuts. Add the grated lemon rind and some cinamon
Mix with the brown sugar
Spread on the rectangle of dough
Roll up from the long side
Cut into 8 or more slices
Place in a buttered cake pan. Cover and let sit until doubled in volume. Brush with milk and place in the oven at 375F for 25 min
