INGREDIENTS
Steps 2 to 17 are what is called "mise en place" which is French for "putting in place".... It's basically getting your ingredients ready for cooking before hand -known in English as "prep time" lol
Have all your vegetables, bowls and your cutting board ready... Be sure to wash the leaves and stems of your Bok choy carefully to remove sediment and dirt...
Place the bundle of washed Bok choy on the cutting board and chop from leaves to stalks
Chop them as chunky or as fine as you like... But chop all the way to the end of the stalks but discard the ends.. Put into a bowl and set aside.
Wash your red potatoes carefully. You don't need to peel them as they can be cooked with the skin on ... Just chop them into little pieces for easy boiling
Add the chopped pieces to a bowl
Slice an apple into half and core one half. Put the other half away ( or eat it... Up to you )
Slice that half into 4 pieces and cut them up into smaller pieces like you did with the potatoes
Add to the bowl with the potatoes
Peel the sweet potatoes
After peeling, wash them and proceed to slice them up
Slice them into smaller pieces. Be careful as sweet potatoes are a little tougher to chop up than apples and red potatoes..
In the meanwhile put a medium pot with water on to boil.. Add a little bit of salt to pot
Add the sweet potatoes to the bowl with the apple and red potatoes. Set bowl aside
Slice red onion into half... ( to avoid your eyes watering do one of these two things or both- rinse the surface of the onion under running water and/ or light a candle before cutting it ).. Chop fine
Slice up garlic and chop finely. Put on same plate as onion and set aside.
Right now you have all the vegetables ready so let's start cooking them
Add the potato apple mixture to the pot of boiling water and cover. Cook until tender and a fork goes through the potatoes easily
The water should be boiling
In a saucepan add the olive oil when the pan is hot
Add the onion garlic mixture
Stir and coat with oil
Keep cooking until the Onions are transparent ( see through )
To make sure they cook cover the pot
Keep checking them they should start to get transparent the longer they cook
Take out your baked beans... I decided to use these that I've had in the pantry for a while
Open can and put into a small pot
While the baked beans are heating up , put your Bok choy in the saucepan with the onions
Stir to ensure that everything mixes well
While the potatoes, baked beans and Bok choy are on the fire.. Grate your cheese ( if you buy shredded like I usually do ... Skip these steps)
Grate about 1/2 lb of cheese. Be careful with the grater
Set aside the cheese.
By now your potatoes should be finished so strain them into a colander
Get your potato masher and mash the potatoes up. I usually do it in the same pot that they were cooked in as the heat helps the cheese to melt plus it's less to clean up
Take a step away from the potatoes for a minute and add the green seasoning , ketchup, honey, vinegar, mustard, barbecue sauce, black pepper, a dash of Sazon to the baked beans...
Check on your Bok choy ,,, it should be steaming covered... Turn your fire down to a simmer
Continue mashing the potatoes
Add the butter/ margarine and heavy cream/ milk to the potatoes . Mix well
Mix everything together
Check on your Bok choy again... Should be steaming and the stalks getting transparent . Add a little bit of black pepper and a sash of Sazon to the Bok choy
The baked beans should be boiling ... Turn down the fire to a simmer and cover so that it can thicken...give it five mins and turn it off
Add the cheese to the mashed potatoes
I like my potatoes cheesy so I added sharp cheddar as well
Check the Bok choy again...it should be done now . Take off the fire
Put them into serving bowls If serving right away or put them in bowls for the refrigerator

- 1/2 Apple
- 2.0 Large sweet potatoes
- 2.0 Medium red potatoes
- 1.0 Tin baked beans
- 1/2 Large red onion
- 2.0 Cloves garlic
- 1.0bnch Bok choy
- 1/2Tbsp Butter (or margarine)
- 2.0oz Heavy cream ( or milk )
- 1.0Tbsp Matouks green seasoning (or you can make your own)
- 1.0Tbsp Mustard
- 1.0Tbsp Honey
- 1.0Tbsp Barbecue sauce (honey or whatever flavor you like)
- 1.0pch Sazon seasoning packet (con cilantro y achiote)
- 1.0pch Salt
- 1.0pch Black pepper
- 1.0Tbsp Honey mustard
- 1.0Tbsp Ketchup
- 1.0Tbsp Vinegar
- 3/4lb Cheese (cheddar and/or sharp cheddar cheese)
- 1/2Tbsp Extra virgin olive oil
