Preheat oven to 180 degrees Celsius. Line a baking tray with baking paper. Make sure you wash your hands well with soap.

Finely chop up parsley, crush the garlic, and put in a bowl with one of the eggs, the cheese, the olives and the pepper. Mix thoroughly.   Note: Careful with the chef's knife as they are very sharp.

Cut the puff pastry into quarters to make squares, and dampen the edges of the pastry with water. Cut off any freezer burn.

Place a heaped tablespoon of the mixture on a pastry square and fold in half. Make sure the edges are stuck together properly, so that no mixture falls out.

Bake the Cheese Borekas at 180 degrees Celsius for 30 minutes or until golden. Make sure you wear oven gloves so you don't get burnt.

Eat with (or without) a sauce of your choice, (I have used sweet chilli sauce) and enjoy!
