Combine prawns, lime juice, oregano & garlic in a flat glass dish.  Sprinkle with salt & chill for 20 minutes, stirring occasionally

Halve avocados & scoop out flesh leaving a 1cm layer to act as a bowl. Coat with lime juice to stop avocado browning & keep the flesh for the ceviche

  • 1/2tsp Dried Oregano
  • 1.0 Clove Garlic
  • 2.0 Avocados
  • 1/3 Cup canned corn kernels
  • 1.0 Jalapeño, seeds removed, finely chopped
  • 1/4 Cup Coriander leaves, chopped
  • 1/4 Cup Coconut, toasted
  • Corn Chips
