How to make cashew coated granola
If you like the taste of cashews, you will love this cashew coated granola!

INGREDIENTS
Gather the ingredients.
Preheat the oven to 350 degrees. Line a large baking sheet with parchment paper.
Juice an orange until you have 1/3 cup.
Zest about a teaspoon of orange peel.
Place the honey, orange juice and zest, brown sugar, vanilla and dry roasted cashews into a Vitamix (you can also use a food processor).
Select variable 1, then turn the Vitamix on, and slowly increase speed to variable 10.
Blend for about 30 seconds, or until smooth. Use a spatula to scrape down the sides of the container.
Chop the walnuts. If you want the granola to have a more intense cashew flavor, sub the walnuts with whole or chopped cashews.
Chop the dried apricots.
In a large bowl, place the oats, almonds, apricots, walnuts, dried cherries, coconut flakes, dried cranberries, and pumpkin seeds.
Stir to combine.
Pour the cashew coating into the bowl.
Stir well.
Pour mixture into a baking sheet lined with parchment paper.
Bake for 35 to 40 minutes. Be sure to stir every 10 minutes or so. The granola is done when it is lightly browned.
Remove from the oven and let cool. Store in an airtight container.

- 1/2c Raw honey
- 1/3c Orange juice
- 1.0tsp Freshly grated orange zest
- 1.0tsp Vanilla extract
- 1.0c Dry roasted salted cashews
- 3.0c Old fashioned rolled oats
- 1/2c Slivered almondss
- 1/8c Walnuts, chopped
- 1/2c Dried apricots, chopped
- 1/2c Dried cherries
- 1/2c Dried cranberries
- 1/2c Coconut flakes
- 1/2c Pumpkin seeds, unsalted
- A powerful blender or food processor
- 1/4c Brown sugar
