Pie crust: 2 1/2 cups flour, 3 TB sugar and a pinch of salt. Place these in your food processor (or large bowl and use pastry cutter)
Add 1/2 cup cold butter and 1/2 cup lard or shortening
Pulse until resembles small crumbs
Then add 2 TB at a time, cold water. I end up using around 1/4 cup but be careful not to add too much water. Once it starts to take form, don't add anymore water. It's ready to roll out
Place your crust in a pie dish and start peeling apples
I used about 6 med sized apples
To this, add about 3 TB sugar, about 2 TB flour and 1 1/2 tsp cinnamon. Squeeze a whole lemon, then taste
I do not like the super sweet apple pies, I think it drowns out the taste of the apple so be careful not to add too much sugar. Once in the pie shell, take a TB of butter and dot around the apples
Add the top crust and pinch the ends closed
Be sure to cut slits in top so steam escapes from baking. Bake at 325 for about an hour, maybe longer depending on your oven.
While its baking, mix together equal parts of (3TB) brown sugar, softened butter and white karo syrup. Once the pie is nearly finished, you will spoon this on top
Take out of oven and spread the caramel all over. Slather it all on!
Return to oven and broil until the topping gets bubbly and baked.
Once cooled cut and enjoy..with ice cream :)
