First thing, preheat your oven to 250 degrees (225 degrees for a clear or dark dish). Place parchment paper on a baking sheet & spray with cooking spray or butter.
Place corn kernels & oil in a large pot on medium & cover. When it begins to pop, shake the pot. As the pops begin to slow down (about 3 secs) remove from heat & uncover. Move to a large bowl.
In a medium saucepan, melt the butter on medium heat. Add corn syrup & brown sugar and stir. Continue to cook over medium heat without stirring for 4 mins.
Continue cooking for another 5 mins but stirring every 30 secs. Remove from heat and stir in vanilla, salt & baking soda.
Pour caramel over popcorn & gently fold together. Place on prepared baking sheet in an even layer. Bake for 15 mins. Remove from heat & allow to cool. Devour the deliciousness! Makes 12 cups
