Meanwhile, have some sesame seeds ready and slice the bananas. Arrange the slices on parchment paper or a silicone mat. Place on a baking tray for support. Do not use wax paper, it may stick.

When it bubbles rapidly and just begins to color (above), pay attention. From this point the mixture  browns very quickly. Have the fruit and sesame seeds in place before this stage!

The crunchiness of the caramel with sesame seed balances nicely with the smoothness of the bananas. Enjoy!
