After getting some feedback about my cannoli recipe I dug around a bit more to find out a bit more about the famous Cannoli! Turns out there are hundreds if not thousands of different pastry recipes!
Here is one using Marsala and a broom shaft! Thanks for the feedback everyone:)

This is the size of the cutter I am going to use. 95mm and the size of the broom I cut up 25mm

Scale flour

Cube butter

Scale sugar

Grab eggs

Crack 2 whole eggs and 4 yolks into a bowl

Measure Marsala

Start rubbing in butter

Like this

Done

Sift in sugar

Like this

Add eggs

And Marsala

Start mixing

Mix mix mix

La la la

I had to add more flour as it was a bit wet still

Ok looking good

Wrap up and chill for a few hours or overnight

So here is my cutter and 5 pieces of broom shaft

I used 1/8 of the dough, as a whole batch gives you 1.4kilos! But it freezes really well and saves you making it all the time if you love cannoli like me!

Flour it up

Get one egg white

Start rolling it out

Fold into thirds

Like this

And put through your pasta machine

I rolled it to the second last setting

I got 7 out of 1/8 but you can re roll the scraps

Dab with egg white

Roll up like this, I also left mine quite loose so they would bubble up more on the inside

Start frying in oil 180-190c

They came up really well

Decorate

Dust

Put on a plate and eat! Enjoy
- 680.0g Plain flour
- 130.0g Icing sugar
- 160.0g Butter
- 2.0 Eggs
- 4.0 Egg yolks
- 250.0ml Marsala wine
