Mix the mascarpone, powdered sugar, and the cream with an electric hand mixer. Use rubber spatula to scrape the sides of bowl Mix for a bout 3 min.
Next add the ricotta.
Mix for another minute,
Add the vanilla and almond extract. And mix again til everything is incorporated. About a minute.
Add chocolate chips and mix with a spoon or spatula. You can also add chopped pistachios.
This is how it should look. Scoop into your serving bowl and refrigerate for at least an hour.
Today I'm serving it with Italian wafer cookies (pizzelles). This dip is great with: ice cream cones broken into pieces, apple slices, vanilla wafers, graham crackers.
