seed and slice kumquats into quarters lengthwise
combine 1 part sugar and 2 parts water
bring to a boil over moderate heat and stir until sugar is dissolved
add kumquats and let simmer for about 15 or 20 minutes, stirring often
when the kumquats are tender and shiny and the sugar water is syrupy, remove kumquats with a slotted spoon and let dry in a single layer
candied kumquats are great on chocolate cupcakes! use the kumquat-infused simple syrup in cocktails
