Add 1 peeled and cut up butternut squash plus 1 large onion peeled and diced. Put into medium sauce pan.
Add 1 32oz carton your choice of chicken, turkey or veggie stock.
Bring to a boil and simmer until veggies are fork tender.
Without draining using a potato masher gently mash mixture.
I usually mash it as best I can...
And then I use a submersion blender. If you don't have one of these just keep mashing until everything is nice an smooth.
I like to add salt and pepper. I also add 1/2 stick of butter or smart balance. Some may like to add nutmeg and/or a bit of cinnamon. I prefer it without but you add whatever spices you like!
Mix together until blended well.
