Ingredients!
Brown sausage over medium-high heat in a large skillet.
Use potato masher to get sausage into small crumbs.
Tada!
Place a paper towel on a plate.
Dump cooked sausage on top. This will soak up the grease.
Like so.
In the same pan dump in the hash brown to cook.
Keep stirring so the potatoes don't burn. Add salt to taste.
Add pepper to taste.
While the hash browns are cooking crack 12 large eggs into a bowl.
Add salt to taste
Add pepper to taste.
Add about 1 cup of milk. Whisk well.
Add 7oz can of green chili
Whisk together.
Stir potatoes and make a clearing in the center.
Add egg mixture.
Add sausage into mixture when eggs had set up some.
Keep cooking until eggs are completely cooked.
Now you're ready to build the burritos. Heat the tortillas in microwave about 35 secs to soften
Place 1/3 cup of mixture in the tortilla.
Add some cheese.
Fold the sides of the tortilla
Then roll up.
When they are all rolled up its time to wrap up. Lol. Use cling wrap.
Now bag 3-4 into a freezer ziplock bag.
Then place smaller bags into a larger one. The double bagging will help prevent freezer burn. You can reuse the bags when you make another batch later.
Date the bags and throw them in the freezer. When you're ready to eat grab one out and unwrap. Then wrap the burrito in a paper towel and heat in microwave for 2 1/2 to 3 mins. Then eat!
- 1.0lb Sausage
- 12.0 Large eggs
- Shredded cheese
- 2.0 Packages tortillas
- 1.0c Milk
- 7.0oz Can Green chili
- 32.0oz Hash brown potatoes
- Salt
- Pepper
