First sautee spinach onions and mushrooms in a pan
cook either quick oats or steelcut oats in either water or milk until thick and creamy
when you add them together it will make a savory healthier "risotto" but it will be oatmeal instead of risotto!!
This is the result. Just add some extra garlic powder and salt and pepper and you are good to go!!
