Heat 3T of any oil you'd like over med-high heat in a heavy pot. Mine is a porcelain covered cast iron pot.
Cut the white parts off the leeks, toss the tough green tops. Wash the white parts off, making sure to fan out each piece, leeks like to hide sand and dirt! Once clean thinly slice.
Add leeks to hot oil, sauté until golden brown and fragrant.
Add beef, season with salt and pepper. Brown the beef on all sides.
Add enough beef broth to just cover the leeks, about and inch or so will do.
Turn heat down to simmer and cover pot.
Dice sweet potatoes and apples into uniform pieces.
Finely chop the garlic, add to sweet potatoes and apples
Add the allspice and red chile flakes, drizzle with olive oil
Bake sweet potatoes and apples in a single layer in a baking pan on 350 until roasted and crispy. The skins become crunchy and sticky like toffee and the insides are like candy!
Add any extra sweet potatoes to the beef if they don't fit in your pan
