Place blueberries, lavender, and water  in a heavy saucepan. Simmer for 30 minutes over medium low heat, partially covered to avoid bubbling over.

Add 1 cup sugar. Increase heat to medium and bring to a low boil. Cook uncovered for 5 minutes.

BE CAREFUL! Hot sugar syrup is like napalm. Stir occasionally, and be careful not to splash. Adjust heat as needed to prevent boiling over.

Cool completely, and then strain and bottle. Keep refrigerated. Enjoy in soda, cocktails, and desserts!
